Ok, I found a partial answer to my question.  The National Honey Board  
contracted a study (undated) by rTech labs of MN.

It covers a reasonable group of varietal honey's, presents a graphical  
illustration.  rTech apparently is a food lab with a 'trained' food sensory  
panel.
 
So, my next question, where does one get such training?
