Also, the sucrose enters the bloodstream by passive transport(osmosis) which means excessive amounts of sucrose can enter the blood too quickly while the smaller molecules in honey sugars enters the blood by active transport.  This means it requires energy and time to enter the bloodstream so there is less likely of a chance for high blood sugars.
