- I heat my syrup >130 

I am curious as to why anyone would heat syrup.  It is very easy to make syrup with cold water - just needs agitation for 15 minutes, so a tank with a rotating impeller or pump cable of coping with sugar crystals will do the job well.  Before I moved to using fondant exclusively I used to use an old washing machine; blocked the outlet to the pump until the sugar had dissolved, then just pumped out the syrup.
