Have a look at Maxant's 1" gear pump setup.  They use a 1/3hp appliance motor and jackshaft to get a double gear reduction:

I am using a 0.6hp SEW gearmotor to direct drive a 1" tri-clover positive displacement pump.  It is a 3300RPM motor with an 8:1 gear reduction.  It doesn't quite have the torque to get the honey started when colder than 30 deg C.  If I run a heat gun or hair dryer on it for a few minutes before turning it on, it works great.  This winter I plan to switch it to belt drive with a further 2:1 or 3:2 reduction to give it a bit more torque.  A 1hp motor would have been better, but I got this one on ebay for a very good price.  It has a 3ph motor and I am using a 1ph to 3ph VFD for speed control.
