My antique nutrition book, 1984, says corn is OK for celiac.  On the other
hand corn is frequently not tolerated by allergic people.  I'd cut out corn
for a while.  A really bland diet at this point would help.  Later on, when
baby is older, 6 mo or so, mom could try corn again and see if it works.
She can eat rice, any veggies, legumes (  nuts are OK, but I'd go easy on
them  for now), fruits,  meat, fish poultry, eggs. Milk is also OK, cheese
etc. but again I'd go as easy as possible.  One breakfast  that is yummy is
brown rice & chopped raw apple, moistened with yogurt.  She's going to have
a boring, limited diet for a while, but the food intolerances usually
resolve as baby gets older (if not repeatedly insulted by trials.)  Of
course the celiac doesn't ever go away.  Sincerely, Pat in SNJ
