I am actually working with a mom now who is doing just this.  It has taken her about 5 weeks to slowly "shut down" the one side.  Her story is very very similar to what you described.  Excruciating pain in first breastfeeding experience, recurrent mastitis etc etc.  The mom is very traumatized and won't consider feeding on that side.

Basically the protocol that I have followed is the same as gradual mother lead weaning.  Start with scheduled pumping and slowly over time drop a pump session a day until the body stops producing milk on that side.  For this mom 5 weeks got her to the point of pumping 1 time every other day.  I expect another 2 weeks before she is fully out of the woods.
