It is totally and completely possible to nurse exclusively with one breast.
If a Mom can nurse twins and triplets exclusively with two breasts......one
is fine for one.  :)  I also have had personal experience with moms who
either only had one breast, or for some reason the baby would ONLY take a
single side and they all exclusively nursed to natural weaning.  No problems
at all.  Keeping an eye on wettings as is standardly done will suffice.
