WHY is preterm milk different?
Rather than suggest that evolution (or mother nature) designed preterm milk
to help preterm infants survive (unlikely), it probably has to do with the
relative development of the breast at that stage in the pregnancy.  The
alveolar structure, tight junctions, and all the other stuff better
physiologists than I discuss, changes throughout pregnancy - perhaps more
"leaky" so that more protein and salt get through earlier in pregnancy.
