Unless you know that the baby is not going to be able to feed for a long
while (like a 25-28 weeker or something) I'm struggling to understand why
that would be desirable?? I'm missing somthing here. Shouldn't a 1hr old
baby still be lying on their mother's chest??

A couple of years ago, we went to the "pumping within the first hour after
birth" if the baby was unable (or clueless) and I have to say, we have had
very positive results with this approach.
