Hyperscore is a fun program, but you really can't manipulate sounds.
It is kind of a midi sequencer.  It is available for free download
somewhere on the MIT site, you can google it.  I think it hasn't been
worked on for a few years, but it is pretty nicely done.  If you want
to be able to manipulate sounds, I recommend amadeus (shareware) or
Ableton Live.  They are entirely different, but a lot of fun in their
own way.  Ableton is like 300 bucks, but it is a killer program, much
richer than either soundtrack or garage band.  None of these really
work on the exhibit floor or even in unfacilitated workshop settings.
