I don't know much about stop-motion animation interactives, where people
assemble sequences of photos of clay figures etc. Except that these exhibits
seem a brilliant way of integrating screen-based and physical activities. 

Surely the computer software user-interface is the most critical thing, not
the camera. You could use any cheap old webcam. However, these would be
fixed or manual focus. Using an inexpensive video camcorder would give you
the big advantage of auto-focus.
