Loic Tallon & Kevin Walker put out an edited book a while back that covered the topic, although I don't know how exclusive it was to hands-on museums (I recall there being a chapter or two about art museums):

The Liberty Science Center was experimenting with mobiles as well, some of which I think might have been captured in this book (I have not read it so I can't say for sure):

I experimented with using mobiles as interfaces to shared exhibits at a hands-on science center, where I specifically was looking at how much the handheld "hogged" the attention of users (in sum: it did capture their attention, but users were pretty good about shifting attention between the device and the exhibit):

...but in my case the visitors were digitally, not physically, manipulating the exhibit. I believe Sherry did look at how visitors juggled (sometimes
literally) mobiles and physical hands-on exhibits in one or more of her
papers:
