I can't speak to traveling, but for permanent exhibits, there are V-shaped plex mounts that the books can rest on while open.  It's best if they are padded.  You need two thin (paper-safe) mylar loops to keep the book open to the pages you want.  The whole thing gets covered by a plex box.  Your best bet is to call museum colleagues in your community to help out (Martin, I know that the guys at the Met would be more than happy to provide guidance).

By the way, if you are interested in a cool chemistry experiment to demonstrate safe plastics that won't destroy books, gather a selection of plastic baggies, including some conservation quality ones.  Run a copper wire through a bunsen burner flame, then use the wire to poke a hole in a baggy.  Then put the wire back in the flame.  If it burns green, there's chlorine (PVC)present and the bag isn't safe for conservation purposes.
