Hi Alissa - Always a challenge! Glad you started the conversation.

*Bin of wooden "dominoes" for setting up and knocking down - esp if 
there's floor space around the counter
*Dowels and rubber bands - again, floor space
*Bin of a variety of caps (shaving cream, milk, etc.) - stacking, 
towering, sorting
*Prints of the FETCH! activity guide to Throw Your Weight Around - 
tricks to play with body balance against walls and with a chair
*If OK with water - pennies-and-foil-boats, but with washers instead of 
pennies, and Flinker from Zoom (like sink and float... with flink!)
*String telephones, at least for testing if not constructing
*Build a mini-arch bridge
*Build a paper bridge, test with washers
*Copies of optical illusions
*Paper clip catapult (from Zoom)
*Fold origami jumping frogs from index cards - how far can you make it jump
