Usually, staff involved with devising exhibit concepts, developing graphic panel or website content choose science news stories at my institution. 

Ultimately, the choice of stories depends on the individual staff member, perceived interest in your target audience, whether requests or enquiries have been made by visitors for information and the relevance of the story to your website's/exhibit's theme (e.g. nationality of research, medical/physics/chemistry, etc.,)

Apart from the problem of knowing which stories to run, you need to consider staffing and software capabilities for updates-who will do it and how will the updates be uploaded/displayed. If it's too difficult to load up new stories (accessing the computer in an exhibit's housing, or passing on the story to an external developer), then the process can fail. Building in these capabilities at the start are vitally important.  

Subscribing to university media release mailing lists, and some journal mailing lists (such as Sci Am, Nature, New Scientist and other specialist journals) is a useful way of sifting through news stories. Many websites publish news stories from various sources (http://www.eurekalert.org, globaltechnoscan, etc.,) may also be worth checking out.

I'm interested in knowing if any science centers are attempting to provide
either as an exhibit on the floor or on a web site current science news that
may be on interest to your public?  If so who is responsible for sorting
through the news services and how do you determine what to cover?
