Oh I love fossils. It is my hobby and great avocation.  It doesn't pay any better than the museum field, so I stick with design. Fossils are a better hobby than design....

I would think the first thing that comes to mind after the pure exercise if unearthing the fossils* would be to map them using a grid system**; then maybe have something to help with the identification; then using that look at the time period (do you have index fossils in the exhibit?);  and so on.  

Possibly include other fossils with the dino material such as plants, insects or shell fish.  Those help tell the bigger story.

You might make the dino dig representative of a real site and include maps (road and geological) and a story about how it was found and the history of it's exploration.  It could be anywhere from Georgia (close to home!) to Montana, to the Gobi Desert.

Of course this all assumes it will still be Dinos.  Florida has a really rich Tertiary fossil record but it might not be as exciting as dinosaurs.

* Lots of ways to do the dig matrix, from hard plaster to loose sand.  All have their pros and cons and often the biggest issue is what you folks can handle in the way of maintenance on a daily, weekly, monthly schedule.  My favorite was sand mixed with a "paraffin".

** Location data is THE most important information that can be collected. Even the specimen can be collected only in photos but knowing exactly where it was found will be the key to what, when and why.  That is what we emphasize with both kids and adults when the paleontological society I belong to does outreach.
