Things we have done for Earth Day and similar:

invite local university to show off their solar car
invite bicycle delivery and tour folks to give rides
give in-line skate lessons
bicycle safety programs
people powered musician (bike to charge battery for amps etc)
give away seedlings (courtesy of Arbor Day folks)
local food programs (local farmers)
recycle art
live animal programs with local Audubon chapter
looking at how other cultures celebrate the earth
exploring green packaging (playing with corn starch packing peanuts vs
Styrofoam)
invite the city to talk about recycling program
invite a local company that makes toothbrushes, plates and flatware from
recycled plastic
invite Nike, who recycles old sneakers into playground materials
decorate reusable shopping bags to take home
pack a "waste free lunch" (Tupperware vs plastic bags, thermos vs juice
box, etc)
meet-and-greet composting worms

I'm sure there's more, but that's what I came up with quickly.

good luck!

Dear colleagues,

The city municipality of Haifa turned to us in a request to suggest a
program for the soon coming Earth Day. They stress they don't want to
"recycle" old ideas that have been exhausted in the past, like turning
off electric appliances and such, rather they want a new attractive idea
that will appeal to the media as well as the citizens.

We thus are turning to you to enrich our bank of ideas.

Best

Tal
