I'll add to Jeff's comments by saying that it sounds like you may be
also talking about custom exhibits with either new software or media
requirements.  For that you can also sometimes work with a "per second"
number for A/V production.  There are numerous A/V producers who can
help you with that. 

Jeff's numbers of $250-350 per sq foot for exhibits might be a bit low
for ones with high-tech or high A/V expectations.  But those numbers are
what I would work with for a typical "hands-on" interactive science
exhibit.  

"Interactive" is a pretty loaded word.  For some it means any exhibit
that requires a human interaction. But that could be as simple as a
flip-up panel or as complicated as a working electron microscope.  If
you give us a better idea of what you really expect that would help.
