This floating activity actually does work really well when the eggs are kept out of the refrigerator for at least a week or two so that enough of the internal liquid can evaporate. 

It's fun to take a bunch of different eggs labled with various dates, and suspend them at different levels in a tank of water. They only stink when they break:-)

If you do this along with egg candling, you can see that the shells are porous so that air can get into the egg and the liquid evaporate out. An egg candler can be easily made with a plastic flash light, card board tub (cut up paper towel roll) and duct tape.

According to my ancient Fanny Farmer cookbook only fresh eggs sink,
while eggs that are past their prime will float. So if you're brave
enough to risk working with rotten eggs, you can add another variable
to the float/sink experiment.
