--paper snowflakes
--make your own thermometers (glass jar, straw....you know this one?)
--animal insulation comparison (Ziplocs of feathers, fur, fat (Crisco)...plunged into bowl of ice. We call it "Keep the Heat")
--display about what animals do in winter (hibernate, migrate, stay put...)
--a display featuring your staff and what they like to do in winter (although being in Texas, you probably don't have quite as many skiers, snowshoers and the like...)

I'd suggest painting the snow but, again, you're in Texas.
