In reference to these "rock ovens," I have had experience with the same
type of features related to rail construction in the Klamath River Canyon
in southern Oregon and northern California. As far as the ethnic
attributions, I have heard numerous different conclusions. These included
Italian, Chinese and Greek. Numerous cultures use domed, radiant heat
ovens. In fact, there is a small, ceramic example from Jamestown,
Virginia. As far as I know, these ovens are primarily used to bake
breads. However, I suppose they could be used to bake a multitude of
different foods. If you have not found references to the use of the
ovens, a fire is built within it and after the heat has been allowed to
build up, the ashes and coals are extracted. The food is placed within
the cleaned oven and bakes by radiant heat. Priscilla Weggars (sp?) from
the University of Idaho published something on these ovens not too long
ago. I forget the reference but it surveyed ovens in Oregon, Idaho and
Washington, I believe. If you can't find the article, I'm sure that you
could contact her. I just looked in the SAA and SHA membership
directories but couldn't find a listing. I hope I have the name right.
