Hey Brian,

Although this is a bit tardy, and does not meet any of the
criteria in a field school you are looking for, I thought I
would let you know that the University of Virginia is offering
a 6 credit field school in historical archaeology this summer.
The site is located in Williamsburg, Virginia and is an early
17th-century plantation site. The field school will also be
doing some field work at Jamestown, the first permanent English
settlement in North America (John Smith, Powhatan, etc.)
The field school runs from June 17 to July 26 (6 weeks) and
it costs about $200 per credit hour
for out of state students (in state $140). Accomodations are
at the College of William and Mary in grad student housing with
A/C and kitchens for $127 per week. The price is pretty steep
for out of state students, but if you are at all interested in
historical archaeology, this should be a fun one.

Good luck in your search for good dirt to dig, and if I can
answer any further questions, don't hestitate.
