The Episcopal Church's "Hymnal 1982" has two hymns specifically for St.
Stephen's day: #231 "By All Your Saints Still Striving" (to KING'S LYNN,
a folksong adapted by RVW) and #243, "When Stephen, Full of Power &
Grace"--text by Jan Struther (yes, the same as the 'Mrs. Miniver'),
set to an old shape-note tune.

Of course, any hymn for a Martyr would be suitable.

I'm cross-posting to a Liturgy newsgroup for suggestions.
