No-one mentioned Antal Dorati on Decca? Although not HIP, I still find
the level of interpretation consistently high for a complete set, and the
Paris Symphonies have an expressive grandeur which fits the character of
the music IMO, as Haydn wrote them for an orchestra far bigger than what
he was used to at Esterhazy.
