Just a couple of personal favorites to recommend:

Symphony 7 (EMI midprice) Berlin Philharmonic, Herbert von Karajan

One of the best recordings and performances at an unbeatable price.
Recorded in the Jesus Christus Kirche, Berlin-Dahlem.

Symphony 8 (DG) Vienna Philharmonic, Herbert von Karajan

One of Karajan's last recordings.  A sublime performance of this sublime
masterwork.
