Some further examples:

Prokofiev's Lieutenant Kije uses a tenor sax.
Villa-Lobos wrote a Fantasia for Saxophone and Chamber Orchestra (1948).
A distant memory of this makes me think it's a soprano sax.
Karl Amadeus Hartmann's 2nd symphony makes extensive use of a baritone
sax.
