Our main yard is across the road and a couple of paddocks back from a stables run by a work colleague of mine.    Conflicts have mostly been where riders were walking or running horses through overhanging flowering gum trees - the bees get caught in riders clothes or knocked onto the horse and when they are rubbed by saddle, rider or reins they sting.    Fortunately, he's a pragmatic guy and when the riders complain he pretty much tells them to go grow a brain:  the flowers are plainly visible, the bees are visible and audible.. don't ride through the darn trees when the gums are flowering. 
 
He also had suspicions that a particular brand of saddle soap (I think? - not a horse person here) had something that was a bit interesting to the bees - probably beeswax - changed product, no problem.   Bees weren't stinging in that case, but it was disconcerting for riders.

Bees aren't generally fond of animal sweat.   They don't like ours, or dogs or horses in that respect, but generally something has to get the bees riled up before they'll go looking for a target to sting.
