I don't beleive honey will expand or if it does, it is minimal due to the 
concentration of sugar and minimal free water.  I read somewhere, a long 
time ago, that to keep honey from crystallizing, put it in the freezer.  It 
gets extremely thick but never solid.  I have a freezer converted to a 
warmer using a light bulb in my barn and honey will be in it year around. 
Winters get very cold in Northern Michigan most years and I have never had 
any issue with expansion from cold weather.
