This is quite an interesting thread but I wonder what it all means.   There is discussion about whether or not pollen should be removed from honey and whether this impacts a description of what honey really is.  

Fair enough.

Reading between the lines I wonder if there are some hidden real concerns here.  The finger is being pointed at the not quite legal import of what is said to be Chinese honey.  Without the pollen it is quite tough to directly identify the source but the Chinese honey generally is a concern ... so make it a target.  The comments about the quality of the honey IMHO are nothing more than a red herring, the issue here really is the price.  China can ship honey to the States (and anywhere else for that matter) and sell at a price (making a good profit) that is less than the local production cost.  In turn that means that either local honey producers reduce their costs to compete or ultimately have a problem.   

At the end of the day it is the difference between quality and quantity.  It is therefore very necessary to consider how to approach the market.  The China flow (or wherever else honey is abundant and  cheap) will not be stopped so perhaps it is best to set sights for that part of the market where you can survive.
