> Is pollen a constituent or a contamination of honey?

Unfiltered honey would be expected to contain pollen, wax, dust, bacteria, etc. Filtered pasteurized honey would not. But raw agricultural products do not need to be labeled, in any case.

One might make a case that "processed" honey should state clearly that it IS filtered to remove pollen and other natural materials, and may be pasteurized (wrecked) as well.

A legal Standard of Identity for honey should be passed in each state to address these issues. The feds appear unlikely to do it, some states already have.
