I guess there are lots of people out there who don't get heather
honey, as it's usually only available in limited ares. It's strange
stuff. It has a smokey/peaty kind of flavour, reminiscent of many
malt whiskys. Not everyone's favourite flavour, but I think some
people would kill for it.
 
Heather honey is thixotropic, which means it behaves like non-drip
paint. It's naturally a gel, but if you stir it up, for example with
that wire roller, it turns to a liquid for a while and can then be
extracted in a normal extractor. It turns back to a gel a little later.
