I have just blogged describing my method of getting established colonies out of walls. See www.chrissladesbeeblog.wordpress.com    The method, to some extent, depends on the accuracy of my presumption that the queen will stop laying soon after bees stop bringing in fresh nectar as, in summer, there is unlikely to be much condensation to provide moisture necessary to dilute honey stores.  Does anybody know how long it takes for a colony with no moisture coming in to shut down brood rearing?
