Honey does not expand in cold in my observations. The oppisite, it shrinks.

In Finland we don't have experiences of extreme cold, but -35 C is met almost 
every year. No problem for jars in these temperetures. 

As 
others wrote before sugars act as antifreeze. I remember reading that honey 
freezes at extremly low temperatures like -190 C.

A jar of liquid honey  in -22C will run out when put upside down, but not very 
fast :)
