Can anyone supply a figure for the latent heat of fusion for honey? In any calculation of the energy needed to process honey, this is important and represents a high energy input where  crystallized honey first needs to be melted Can't find it via google. I suppose it could be approximated from solutions of glucose or fructose but couldnt find them either without taking a chance on  buying some on line articles.
