<.....  classify different brands for particle size under a microscope.     There may be differing moisture levels, too, which could be easy to determine by weighing, drying, ......>

It might pay to take the powdered sugar you buy, bake in an oven at around 150º for about 1/2 hour, cool, then run through a mortar/pestle operation to ensure that the sugar is in fine powdered form.
