"Doing Historical Archaeology, Exercises Using Documentary, Oral, and
Material Evidence" by Russell J. Barber (Prentice Hall, New Jersey) is a
very good workbook.  It has exercises regarding Written and Oral
Sources, Spatial Analysis and Stratigraphy, Foodways, Analysis of
Portable Artifacts, Cemetery Studies.  My class seemed to get a lot out
of the exercises, especially the cemetery exercises where they had to go
out to visit local cemeteries to conduct their research.
 
Also used Orser's book "Images of the Recent Past".  Has some very good
articles in it.
