Justin Lev Tov's thesis at the U. of Tenn, titled "Continuity and Change in
Upland South Subsistence Practices-The Gibbs House Site in Knox County,
Tennessee", 1994 may offer some insights. Lev Tov found that the faunal
assemblage did indeed reflect changing economic strategies during the history
of the site. You should be able to get his thesis easily through interlibrary
loan.
