Tim, Try "Tanneurs et cornetiers dans le quartier Saint-Roch a Quebec" by
Evelyne Cossette and Annie Quesnel, in "Archeologies qubecoises", Paleo-Quebec
no 23, Recherches amerindiennes au Quebec, mai 1995 (p. 421-436) ISBN
2-920366-16-5. Results of a faunal analysis of bone and horn from a tannery in
an early 19th Century working class suburb of Quebec City. I can send you down
a photocopy if it isn't otherwise available.
 
The volume from which it is drawn (493 pages, perhaps 30 articles, including a
bibliography of prehistory in the Province of Quebec) is worth obtaining as it
gives a very nice portrait of recent results of work in the province:
historic, prehistoric, urban, backwoods (the Great White North!), practical,
theoretical.  Available from Recherches amerindiennes au Quebec, 6742
