I was thinking of a site I worked at years ago featuring an intentionally 
buried amphora, cut off where it was widest in diameter, so the top was 
missing.
The amphora had the typical sort of nipple shaped bottom, and was buried 
upright in the ground.
Not sure if it held water, foodstuffs, or what.
It was in a corner of an adobe room, the Rancho Penasquitos in San Diego 
County.
The site I'm now interpreting is the San Diego Presidio, and we've not found 
evidence of amphoras, but we do have large Chinese "wine jars", and Mexican 
olive jars.  The fragments of these items are scattered throughout the 
Presidio grounds.
So far, it seems the water was brought up the hillside from the San Diego 
River.  Our big jars could have been for carrying and storage.
