Definitely, from the beginning, get the local fire marshal from your building involved.  From my experience, they do not appreciate being surprised, and they do appreciate being involved.

Get best practices from other institutions, write up what you think your own process and procedures should be...not only for during the combustion demo, but also for the storage, control, and access to flammable substances when not in use.  Then I would share/show the combustion demos and procedures to the fire marshal.

Proper presenter techniques and a fire safety talk for each show are a must.  There are lots of 'how not to' combustion videos on youtube, so make sure you have the right staff working on this.  Good luck.
