As usual at this time of year I am picking up apples from my lawn and making cider. Then I take the left over pulp and pour lots of boiling water over it, leaving it for a day or three. Then I take the apple flavoured water and add 4lb of honey per gallon and do the usual things to ferment it. The result is very appley/oakey in flavour, bone dry and very warming! Of course the honey I use isn't of sale quality. I have some dating from about 1995 that could be sold only as 'baker's honey'.
If you want to try the recipe, I remind you that I am in the UK and thus use English measures.
