Hello Diana,

One of my favorite fruit activities is brix testing, which is a measurement
to determine sugar levels in fruit.  You would need a refractometer (which
is always fun for visitors to try out) as well as a few samples of fruit.
Visitors would use a refractometer to determine sucrose levels and could
also discuss some of the factors that contribute to sucrose production in
fruit.  A refractometer would run about $40.00.

Dear Friends
We are having a closure of the year of Chemistry in December and we are
planning an event on the chemistry of cooking. We are thinking about making
a demonstration on the chemistry of fruits and vegetables (ripening,
texture, colors and colors change in cooking, nutritional values, water
content). Any ideas for good demonstrations?
