Glen,

depending on how long the classroom activities are ( or over how many
days they can come back, or take things away for further
observations).......

microscope based observations of stomata opening closing time-lapse of
seeds germinating treating seeds with different levels of salinity and
see how growth/germination proceeds.

having them germinate on a rotating turntable to observe geotropic
behaviour

split a stem of a flower of soft steamed plant and put one side into
blue water the other into red and leave for 15 mins to see the coloured
water end up in different parts of the plant/flower etc.

put potato slices into salt water and some into distilled, and leave for
10 mins and see how osmotic pressure has changed the turgidity

sensors in the green house, monitor oxygen, co2 and humidity levels over
the day.

take a microscope and look at algae and see cytoplasmic streaming

germination at different temperate

classification exercises ( using a key... making a key).

make paper models of various plant seeds and test methods of dispersal (
helicopter seeds, burrs with Velcro etc).

various tests on the food /nutritional composition of "foods" matching
known foods to plants ( olives and sunflowers to margarine for
example)....

a few things to get started perhaps.
