Talk to Keith Feinstein and his work on the interactive "Be the Dinosaur". You have complete control over the movements of a dinosaur in a virtual environment. Head tilt, steps, smell, etc. You can even run in one direction while looking left or right.

The exhibit is currently showing at the Louisville Science Center.

DDR makes for a very fun interface. I worked on a custom version for the
Franklin Institute's Heart exhibit, the foot pads were used in the
sequence which blood pumps through the heart. We also built a version
using the standard arcade foot pads for the McKenna Children's Museum
(designed by JRA), for an interactive called "Get Moving". In both cases
the exhibits seemed much more engaging then a pushbutton or touchscreen
version would have been.

What about "Dance Dance Revolution"  ?  That has a really interesting
interface.  (And, most likely, could be used well in a health-based
exhibit.  Maybe in conjunction with a heart monitor.  Let them know how
many calories they've burned?

Also, it might be worth checking out the Pico Crickets.  I've played
with them a little and it seems like they have a lot of potential.
