If anyone has interest in poultry consumption in an urban Chinatown, results
from turn-of-the-century features in Los Angeles revealed 11.4% chicken,
4.1% turkey, 1.2% duck, and the remainder goose and pheasant. The birds were
mostly aged hens. We also suspect they were raising chickens because of a
glass nest egg among the abundant eggshells.
