I forgot, once I was a real boffin and I read real boffin stuff.
There is a somewhat obscure, expensive journal that covers all types of granular material flows and measurements:

With this journal, the best research tactic to to browse the table of contents.  The best stuff somehow doesn't get
indexed very often.  You will find stuff about sand flow and the flow of bubbly liquids etc.  I promise it's worth
looking at.  
Some of this flowmetry and multiphase dynamics stuff is very difficult and hard to find good info about.
The trouble with "the simplest case" is that it's either a myth or a dream reality can be tough.
