It does seem that "persistence of vision" is a dying explanation.  Though,
with many apologies to Joseph and Barbara Anderson who seem to be *very*
upset by the continuation of this "myth", their entire article seems to sum
up that the fact of persistence of vision does exist...it's just in the
brain and not in the eye...and they don't call it that anymore.

"The visual cortex of your brain will attempt to make sense of any image it
receives.  In the case of these closely spaced, but slightly different
images, it will create the sense of motion you now see.  This is known as
"short-range apparent motion""

BTW, if you do decide to remove the persistence of vision
description...someone should look into your Science Snack on it as well:
