One of my favorites is Schafer & Day's "Peterson's Field Guide To The Atmosphere"
There are some good table top demos of "Why is the sky blue", "How to preserve snowflakes for future examination"
and whirlpools, tornadoes and fire tornadoes.  There are also some great photographic skyscapes and explanations
of all sorts of atmospheric phenomena, rainbows, moon bows, lenticular clouds and the ordinary everyday
assortment of cumulus, stratus and cirrus clouds.
An interesting thing to ponder re: viable science center exhibits is the difference between the S&D tornadoes and 
Ned Kahn's fabulous indoor tornadoes http://www.nedkahn.com/fog.html#tornado My current employer owns one of these 
eand it is perennially popular with all ages of visitors.  IMHOP it would bery difficult to improve upon.  J would 
add that the typical design committee acting on S&D would be very unlikely to produce anything near as interesting
as Ned's exhibits. Buy a good exhibit from a good artist and you won't be let down!
