There's a mountain of information out there, but the following publications may be useful to you. I'm sure people on the list can offer many more suggestions... 

Informal Learning Review
ASTC Newsletters (and other sections of www.astc.org)
International Journal of Science Education
Journal of Science Education and Technology
Journal of Research in Science Teaching
Various science education journals such as Physics Education, Biology Education, etc. 
Public Understanding of Science (with the great acronym PUS)
Journal of Museum Education
Curator
Journal of Popular Film and Television
ILVS Review: A Journal on Visitor Behaviour

These journals tend to deal with industrial environments and you might find something of interest, not specifically related to museum exhibits:
Human Factors
Applied Ergonomics
Behaviour and Information Technology
International Journal of Human-Computer Studies

I have the philosophy that there must be a journal for every nook and cranny of a subject. I have even stumbled across a journal about marketing to children! Scary.

Jakob Nielsen www.useit.com and WIRED magazine www.wiredmagazine.com have some useful thoughts and hints on how people operate with technology and online environments. 

There are also books/reports published by individuals and institutions regarding human factors and exhibit development.
