MIMOSA PUDICA  or "Sensitive" plant. There's a recipe in the Exploratorium
Cookbook. We did a version many years ago. There are a few tricks you can
use to keep the plant from getting fatigued. But you really need a person
who will "love and care" for the exhibit.
